Its exactly how it sounds, you step to the side. As well you can also swerve, jink or use a change of pace to beat an opposition player. Of course there is the Maori two step. This is where you run over the top of your opponent.

There was a famous Wallaby winger in the 80s and 90s called David Campese who invented the "goosestep" where he would lift one thigh up in the air to confuse a tackler on which direction he was heading. Also there was the Jonah Lomu sidestep which was nothing more than running over his opponent which Bill P amusingly called the "maori sidestep"
